"The blend has indeed evolved a little. In addition to the Maccabeu-Grenache blanc base, there's a little Vermentino for the first time. This is a vineyard I planted 4 years ago, on Lias marl, which is starting to produce a little. We macerated this part (10% of the blend) for 1 week."
The singular year of 2022, when the grape harvest began at the very beginning of August with two days of fires in the region... That's the story.

Natural wine, also called natural wine, is a philosophical choice aimed at rediscovering the natural expression of the terroir. The grapes are processed in accordance with the principles of organic farming: no chemicals, pesticides or herbicides. The grapes are harvested manually and mechanically to preserve the living character of the wine during vinification. No chemicals are added to control the fermentation of the wine, except sulphites in very small quantities in certain cases (the maximum doses of total SO² tolerated are 30mg/l for the reds and 40mg/l for the whites).No human intervention alters the bacterial life of the wine. The flavour of natural wine is therefore preserved thanks to:
● organic or biodynamic cultivation in the vineyard;
● manual harvesting;
● use of indigenous yeasts for fermentation;
● no harsh techniques for the wine such as reverse osmosis or pasteurisation;
● no oenological inputs apart from no or little added sulphite.
Our selection of natural / no added sulphite wines
Have you ever tasted a wine without added sulphite? This is a wine with no added sulphur. This means that winemaker allows the natural development of yeast to do its work, from the vine to the bottle. Natural sulphur compounds may form at very low levels, but no sulphite is added by humans in the process. And the good thing is that natural wine without added sulphite is
healthier and does not give you a headache. All the manipulations during the winemaking process are gentle and slow so as not to disguise the soul of the wine, far from the formatted and conventional practices.By choosing this ethical and responsible path, the winemaker works his terroir by ploughing with care. He protects the subsoil from which the roots of the plant draw, and cares for the ecosystem as a whole.
