Analepse 2020 - J-Christophe Comor, Winery the Promised Lands
White wine made from white carignan, the oldest vines of Winery. After a long maceration on the skins and vinification in demi-muid, it was aged for 12 months in Stockinger ovoid tuns. This original and surprising wine, with very expressive aromas, will accompany poultry or meaty fish.
A wine that reveals candied fruit and controlled power. Analepse calls for gluttony!
Perceptible notes of stones, fennel and dried herbs.
The mouth is well present but, in the end, is refreshed as it should be by nice mineral tension.
