We're telling you about their Winery
The wines of Laurence and Rémi Dufaitre are now part of the landscape in Beaujolais and we must absolutely rely on them. This is a VERY beautiful discovery. Rémi Dufaitre and Laurence Liatard started buying vines in Brouilly and the surrounding crus in 2006. Rémi vinifies in the pure tradition of Beaujolais: a carbonic. The maturing of the wines varies from one cuvée to another. With each bottling and depending on the vintage, Rémi Dufaitre can add between 0 and 2mg/L of sulphur to stabilize the wine that he feels needs it. |
From the beginning, Rémi works the soil organically and sells his grapes to the cooperative, but following the fermentation with indigenous yeasts. In 2010, he judges his work close enough to the wine he wants to elaborate and bottle. With the help of Jean-Claude Lapalu, Jean Foillard and the whole band of Beaujolois, Rémi and Laurence are taken under their wings to be introduced into the network. |
