We're talking to you about his Winery
Francis Boulard et Fille, a few kilometres north-west of Reims, has a total of 8 different cuvées with a policy of not dosing the Champagnes (Extra-Brut or Brut Nature). This method is explained by the search for authenticity, minerality, vinosity and implies a harvest of grapes at maturity... so rare in Champagne! Since 2010, Champagne Raymond Boulard has become Champagne Francis Boulard for one third. The three children of Raymond Boulard have indeed chosen to separate to follow their own professional path. This is how Francis and his daughter Delphine set about creating a 3 hectare vineyard from the 2009 harvest, with a production of around 20,000 bottles. | It is true that for a long time Francis was the one who gave the 'organic' direction to the vintages of the maison. The vines they have recovered are certified since 2004 and the new parcels are obviously certified. The general direction is now biodynamic. The vines are worked with composts, brumisation of horn powder, silica. Soils are scratched, vines are protected by a vegetal cover in winter. In winemaking, no surprises, fermentation using indigenous yeasts, no fining. A non-interventionist approach with a search for SO² control. |
