We're talking to you about his Winery
Guillaume Noire is one of the new faces of the natural winegrowers of Maine-et-Loire. Always experimenting and looking for the expression of the terroir, Guillaume offers very beautiful, pure and sincere juices. After a career in the Paris region in the world of advertising and spirits, Guillaume Noire felt the desire to change his horizons. This is when the idea of a reconversion in the world of wine was born. Resourceful, he enrolled at the BPREA in Beaune and followed a distance learning course while continuing his job as an advertiser (it's a good living!). From the very beginning, he was interested in the philosophy of nature winegrowers. He then approached Mark Angeli (a good school!) to glean some advice and see how to put theory into practice. Guillaume then went on to train with Stéphane Rocher (the Ferme de Mont Benault). His diploma in 2017, it's the big jump! He takes his wife and children on a trip to Anjou. They settled in Rablay-sur-Layon where he found a charming house in the middle of the village. He acquires a few hectares of organically cultivated vines located between Rablay and Champ-sur-Layon. Under the guidance of the Ménard family (Winery des Sablonnettes) Guillaume harvests and vinifies his first vintage in 2017. |
Guillaume's wines are quickly noticed by foreign importers. It is true that the work is there, and it is well done. His philosophy Winemaker ? Guillaume explains: "A peasant approach based on respect for nature. Grapes and just grapes, grown without herbicides and pesticides, then vinified without any input other than SO2 in infinitesimal doses if necessary only." In the winery, here are some of the principles Guillaume relies on: organic grapes, healthy harvest, gentle pressing, little racking, long maceration for the reds. Self-taught and rigorous, Guillaume puts the grape varieties as his main starting point. An "Elements" table that can be found as a guideline on the labels of his different vintages.
The wines are bursting with freshness, and generally have a pearly side when opened (synonymous with natural protection); do not hesitate to shake each bottle a little after opening. A talented winemaker to follow closely. |
