A pet-nat made using the ancestral method (i.e., a single fermentation started in a tank and then finished in the bottle with natural sugars and indigenous yeasts).
Still 100% Chenin here. Nose and palate feature notes of white fruit, green apple, exotic fruit (a hint of lychee), and floral notes. Sparkling bubbles. A beautifully crafted pet-nat!
