Champagne CLANDESTIN by Benoit Doussot
Champagne Clandestin is a maison trading company for organic grapes grown on the Côte des Bars in Aube (Landreville). Benoit Doussot, a Burgundian in ChampagneAfter attending the Lycée Viticole in Beaune and spending a few years making wine at Winery in Meursault, Benoit Doussot moved to the Aube region and worked at Winery Vouette et Sorbée, Winery a well-known biodynamic champagne producer. In 2015, Benoit set up his own maison wine merchant business. |
Buying organic grapes in the Côte des Bars regionBenoit Doussot works with grapes from organic plots. These are located within a 15 km radius of Landreville, often on Kimmeridgian marl, which gives the wines a beautiful uprightness. The work of organic winegrowers on the Côte des Bar, too long under-appreciated, is highlighted in Champagnes Clandestin. Pinot Noir with northern (Boréal) and southern (Austral) exposure, or Chardonnay, are all vinified in barrels, with no dosage. Native yeasts, zero dosage
