Fanny Sabre, a gifted winegrower based in Pommard, is one of those winegrower friends we particularly appreciate. From aligoté to prestigious vintages of Premiers Crus, via 'generic' vintages, Fanny Sabre traces her Burgundian path by chiselling wines of great purity for refined epicureans.
Full of desire to do well, stubbornness and humour, the very young Fanny took over in 2005 the family Winery created in the 1980s. And gradually added to it mythical vines in the Meursault appellation to work today 4.5 hectares on the Côte de Beaune. Working with Philippe Pacalet for 3 years, she was introduced to "natural" wines in a total respect for the environment, all based on the notion of terroir.
|Today, ploughing, grassing and organic treatments give life to the vines, and the healthy and ripe harvest is done by hand. In her cellar, Fanny carries out semi-carbonic maceration and fermentation directly in barrels for the reds, in which the lees are blown to put them back into suspension. A unique stirring of the lees and no racking will bring freshness, straightness and finesse to her numerous vintages. The bottling is done by hand to finalize a goldsmith's work. We love it !!!|
