The closer the end of the year gets, the more oysters naturally arrive on our dinner tables. They are a classic of Christmas and New Year's Eve. They can be eaten in different forms and therefore the wine accompaniments can vary.
How to cook your oysters for Christmas?
Hot or cold, we love both versions! Just opened, fresh, with a garlic sauce and why not lemon, it is a timeless classic and surely unequalled. But you can also try oysters au gratin in the oven, with cheese, leek or herb butter; the possibilities are wide! On this basis, try it, test it, let your creativity run wild... and enjoy yourself!

Classic pairing with oysters
The most classic pairing to sublimate the particular texture and iodized taste of oysters is of course to choose a dry, mineral white wine with iodized notes. Go for a muscadet, it will go very well with oysters. It should give you a very nice acidity in the mouth. For warm oysters and gratin, a Chablis or a aligoté can be very interesting!
Champagne or cider with oysters!
If you like novelty and testing new wine and oyster combinations, these few lines are for you! Don't hesitate to taste a dry cider (brut) with your oysters, the match is perfect! Champagne also represents a very good possibility of gustatory agreement. The natural acidity of a sparkling wine will perfectly underline the subtle flavours of the oysters: ideally, opt for an extra brut blanc de blanc champagne, its tension will go well with the oysters.
