Maison Valette Several generations of natural winegrowers

Baptiste and his brother Philippe Valette and Cécile, Philippe's wife, represent the third generation of winegrowers to work the vines on Winery . Maison Valette. The whole of Winery is located in Burgundy and the vines have all been worked organically for almost 20 years!

The 15 hectares on Chaintré, as well as a few plots on Vinzelles, are exploited by true enthusiasts who "accompany" their wine naturally for a better expression of an exceptional terroir. Marketed only when they feel they are ready, the 7 cuvées, mostly old Chardonnay, are a delight of complexity, balance and precision, each with its own character.

Organic and natural wines

At Maison Valette, the clay-limestone or siliceous soils are aerated by ploughing or grassing, depending on the plot. Drained in this way, they regain the microbial life necessary for the good health and "freedom" of the vines, according to Philippe.

Yields are reduced and the grapes, tasted on the vine to determine their ripeness, are delicately picked by hand in small crates and placed directly into the pneumatic press. The juice flows by gravity into stainless steel vats without the addition of sulphur. The next step is one of the most original experiences in the region: the maturing in barrels on fine lees can last up to 72 months (for the 'Mr Noly' cuvée).
