Matching wine with chocolate
Agreed, it's not the most obvious or easiest of agreements. But how can we do without chocolate ! For dessert or in the evening before going to bed, there's always an occasion to eat chocolate! At Easter or Christmas, we're in the habit of giving chocolates as gifts, and this is often the moment for a tasting accompanied by a glass of wine.
The first thing to remember, of course, is to choose the right products, whether for wine or chocolate ! Then, depending on the chocolate content, your choice of wine may be different. Let's find out together!
Champagne or white wine with chocolate
If you opt for a chocolate around 50% cocoa, you can opt for a rosé champagne rosé champagne based on pinot noir or a Chenin demi-sec to stimulate the taste buds.
A red wine with chocolate!
Between 70 and 75% cocoa content, prefer a red wine from the Corbières appellation, with a strong Carignan base. Petites Caves ' advice for a 100% chocolate dessert is to go for a natural sweet wine type Rasteau or Maury ! Pure pleasure!
Chocolate also goes very well with red wines Grenache-based red wines, such as a Châteauneuf du Pape. The tannins contained in the wine respond to the power of the cocoa and enhance the taste of a ganache or dark chocolate fondant.
Avoid dry white wine and rosé , which contain too much acidity for chocolate! The same goes for champagne, unless you choose a rosé champagne as mentioned above.
