We're talking to you about his Winery
The special feature of Winery 'U Stiliccionu' is first of all the composition of the soil: granite arenas with veins of schist. This gives the wines a finesse and freshness rarely found or equalled in Corsica (commune of Serra di Ferro, south of Ajaccio, near Propriano). In just a few years, Sébastien Poly has succeeded in his wager to produce healthy, pure, fine and balanced wines. He has been working since 2005 in the Winery that his grandfather bequeathed him. Vines on 7.5 ha with small yields. This Winery has existed since the 1960s and was then "restructured" by his grandfather (François) with very autochthonous grape varieties: sciacarellu, nielluciu, vermentinu and grenache. We can speak here of a "pinot noir" finesse. It is moreover this finesse that seduced us immediately and will surprise more than one taster! The other particularity comes from the work of Sébastien Poly. | He didn't just take over his grandfather's job, he chose to take over the management of Bio. Then after this first conversion, he chose a meticulous, rigorous and difficult work, that of Biodynamics (he is now certified DEMETER). Here we are in front of a respectful, ancestral work, with ploughing, homeopathic treatments, indigenous yeasts, little or no sulphiting of the wines... His small production of about 15 000 bottles is sold under "allocation" (in other words, we are quite happy when we can obtain a few vintages). Our passion for Natural Wine and the many moments spent in its company have allowed us to obtain in 2016 a few bottles, which we offer you with joy and pride on Petitescaves.com!
