We're telling you about their Winery
Here we are in Burgundy, between Chablis and Auxerre. The (magnificent) wines signed by Alice and Olivier De Moor, Ecocert certified for 10 years, are for many exported, and it is difficult to buy them on the spot. The production is quickly sold out, sold or reserved by more and more wine lovers! The price of a well-deserved success... Alice, coming from the Jura, and Olivier the Burgundian met in 1992. Both graduated from the DNO in Dijon, they lived and worked for other estates until the end of 1994. Their strong personality pushed them to take the plunge with the vines that Olivier De Moor had planted in 1989 and 1 ha rented on St-Bris and plantations on Chitry. After many failures, the couple succeeded, without outside support and in latitudes considered difficult, in refining their wines, which had become straightforward and precise, while respecting their terroir. The conversion to organic farming began in 2005. They obtained Ecocert certification in 2008. They then decided to restructure the winery to work by gravity and bought a pneumatic press. The 7 ha of Winery are worked without sowing and the vines pruned to reduce yields (35 hl/ha on average instead of the 60 hl of some Chablis winegrowers!). Grapes are hand-picked in crates to avoid early oxidation by crushing the berries. | The use of sulphur is stopped during the harvest and vinification. On the other hand, De Moor wines are allowed up to 30mg/l of total S02 at the bottling. Under the grandparents' maison , the old barrels of several wines welcome the juices which ferment for a long time without the addition of exogenous yeasts and without being filtered. The vintages of Winery correspond to 45,000 bottles produced per year and require up to 15 people at the height of the season for harvesting and bottling. Rooted in the limestone soils of an ancient sea, Chablis Chardonnay blossoms on 3 hectares of the commune of Courgis. Their Chablis, from different plots, are located on a plateau (richer) or on hillsides (more mineral for the "Rosette" considered as their 1er cru). The Bourgogne Aligoté sur Chitry are available in 3 cuvées on 2 ha (one of them is from 1902!). Finally, the last two vintages of Bourgogne in Chitry and Sauvignon in Saint-Bris le Vineux represent 1.5 ha. In 2009: they were finally able to start a small trading activity and to go and pick grapes that are well cultivated and controlled in Organic Agriculture in the Chablis and Chablis Premier Cru appellations. The Winery is expanding in 2017 by 2 hectares of Chablis Premier Cru, in Mont de Milieu and Vau de Vey. |
