This family-run Winery , with its long history, took a decisive step by adopting biodynamic viticulture, convinced that this approach reveals the essence of Champagne's terroirs. On the 7 hectares of cultivated vines, each plot benefits from meticulous attention to detail: manual tillage, natural treatments and the stimulation of biodiversity form the bedrock of this respectful viticulture.

The grapes, from emblematic varieties such as Pinot Meunier, Pinot Noir and Chardonnay, are harvested by hand to guarantee irreproachable quality. This approach, combined with the use of natural composts and biodynamic preparations, produces expressive, healthy grapes at the heart of champagnes that are both lively and deep. Winery is also certified organic and biodynamic, in recognition of its commitment to sustainable, innovative viticulture.

Craftsmanship for exceptional champagnes 

At Bourgeois-Diaz, champagne-making is an art that blends tradition and innovation. Each step in the winemaking process is designed to bring out the best in the grapes and respect the identity of the terroir. Natural fermentations, carried out with the indigenous yeasts present on the berries, allow the full aromatic richness of the grape varieties to be expressed. The base wines are aged in oak barrels, a practice that favors slow oxygenation and brings complexity and roundness to the champagnes.

The blending of each cuvée, a veritable exercise in balance, reflects Winery's unique expertise. Whether for brut nature champagnes, with no dosage, or for more traditional cuvées, each bottle expresses the purity of the fruit and the minerality of the terroir. Winery also favors innovative practices such as parcel-by-parcel vinification and prolonged ageing on lees, to produce champagnes of great precision, both fine and intense. Each bottling is a culmination, embodying the exacting standards and passion that drive Winery.

Bourgeois-Diaz champagnes, marked by their purity and complexity, offer exceptional versatility to sublimate a wide variety of dishes.
