We're telling you about their Winery

The Winery of Bénédicte and Stéphane Tissot has been a must in Jura wine for many years now. Wine is a family affair for the Tissot family. Maurice Tissot, father of André Tissot and grandfather of Stéphane, owned 3 ha of vines (vinified in a cooperative) and 25 ha of farmland. He decided in 1956 to plant vines for each of his four sons: Jacques, Jean-louis, Daniel and André. The latter inherits 38 ares, which will become the Winery André and Mireille Tissot, now led by their son Stéphane.

Stéphane Tissot is a rebellious spirit who appropriates traditions while sublimating them. After his studies in Viticulture/Oenology, he joined his father's family Winery in 1989 (he is 19 years old!). First vintage in 1990. Little by little, he took over the management of Winery and adopted organic farming in 1999, then switched to biodynamics (DEMETER certification) in 2004. Not out of militancy, but in search of ever more quality. For him, industrialization is the death of wine. It is its uniformity. Whereas natural wine offers surprises in every bottle, in every sip. Not all vintages are without added sulphite (for example, 60% of red vintages are and the others with little added sulphite).

The Tissot family now owns 50 hectares planted with classic Jura grape varieties: savagnin, poulsard, trousseau, pinot noir, chardonnay. They produce immense wines in all the appellations of the region: Château-Chalon, Côtes du Jura, vin d'Arbois, or Arbois vin jaune. As for the latter, Stéphane Tissot created in 2003 plot-based cuvées, a small revolution for this typical Jura wine. The production of Crémants du Jura is also very important, it represents about 25% of the bottling (about 35 000 bottles depending on the vintage). Moreover, it should be noted that the surface area and the volume of wines allow it to make many tests. Always looking to do better or differently. Thus he asks himself many questions about his yellow wines and more particularly about their maturing in hot or cold cellars or a combination of the two...

In November 2016, a new member joined the Tissot clan: Bracadabra, Winery's own Comtois horse. Since the planting of the Tour de Curon vineyards in 2002, they had ploughed this plot with the horse via different service providers. The project to be autonomous for the ploughing with the horse is old but the setting up took some time and organisation. The whole team of Winery went on a training course on "animal traction". The objective was to plough 4 hectares of vines with Bracadabra, including the Clos de la Tour de Curon.

The Winery Tissot can count on superb terroirs, such as Les Bruyères, La Mailloche, Curon or En Barberon. Today, the Winery André and Mireille Tissot run by Stéphane and Bénédicte Tissot offers a wide range of about 35 cuvées. Enough to satisfy many discerning, curious customers. The reputation of this Winery is international and to obtain a few bottles is an exploit :-)
