We're talking to you about his Winery
Philippe Wies cherishes his vines planted in the lands a short distance from Perpignan, in the Maury appellation. 13 hectares, surrounded by garrigues and protected by an environment of cliffs, which take advantage of the tramontane and the sea entrances. The schist soils give the wines a very specific character. Ploughing by tractor and caterpillar... or even by horse! Flora and fauna are respected and insecticides are prohibited. Philippe even considers all the life that surrounds them as objective allies for a quality harvest. |
Natural yeasts, no filtration, no or little sulphur, these are the processes adopted by winemaker. Carbonic' maceration sometimes or destemming. No pigeage, pumping over sparingly to give finesse and freshness to the different vintages. Fermentation is finished in barrels of 5 to 6 wines. The wines of La Petite Baigneuse are superb, full of freshness, very natural and sulphur-free. |
