We're talking to you about his Winery
The wines ofHervé Souhaut in Ardèche are of great purity, with an obvious minerality, particularly in the "Sainte-Epine" cuvée, a syrah that is more than a hundred years old. By taste and by choice, Hervé, and his wife Béatrice, have chosen the natural approach to the cultivation of their Ardèche vines. Hervé borrows his specifications from organic farming, touches a little on biodynamics but refuses any certification. He remains independent in his thinking. All harvests are manual, sorted, with ripe and healthy grapes. There begin very long macerations at low temperature with, depending on the cuvées, a total de-stemming or not, a more or less long maturing. No additives, no filtration, no SO2 except at bottling to stabilize. When the Parisian and biologist Hervé Souhaut met the wines of Marcel Lapierre (Beaujolais) and those of Philippe Pacalet (Burgundy), it was the trigger! | Direction the Ardèche where Beatrice, his wife, owns a few vineyards. He goes back to school, apprenticing with the purists Dard and Ribo. In Arlebosc, behind the beautiful slopes of Saint-Joseph, he invented a Winery in 1993. With Thierry Allemand, his neighbour in the appellation, he shares his experiences and... worries. The Winery was slowly built up with Gamay in Arlebosc, Syrah on the hillside of Sainte-Epine opposite the Hermitage and finally some white grape varieties such as Viognier and Roussanne. Mainly old vines between 50 and 100 years old on mainly granitic soils with high acidity. |
