What a pleasure to find in Roussillon such fruity, fresh, floral wines with such a beautiful minerality! Loïc Roure settled in the L'Agly Valley in 2003 when he bought an old cooperative cellar in Lansac, which had been closed for 13 years. He had to have the desire to open his own wine bar/restaurant to discover, a few years before his installation, the world of the vine. It was while doing an exciting internship with Thierry Allemand (Cornas) that he discovered the profession. Only a few days with Thierry, and he realizes that this is really his life! After searching in vain for vines in the Ardèche, he rediscovers the Roussillon where he spent many holidays as a child! There were vines for sale and his meeting with Cyril Fahl and Jean-Louis Tribouley finally convinced him to settle down. The Winery du Possible was therefore created in 2003 with initially 2.5 ha then 4.5 ha in 2004, 7 ha a few years later 10.5 ha since 2012. Soon he shares his huge cooperative cellar (600 m2 and 5 m high ceiling) with Edouard Laffite (Winery du Bout du Monde). They can thus share not only all the equipment but also exchange on all subjects concerning wine. Loïc Roure believes that it was only in 2009 that the cellar found its full balance and that vinification was greatly simplified. This region is excessively windy, which makes working in the vines simple from a disease management point of view. The very dry soils limit competition between plants. The soils are worked, with a motor cultivator, a caterpillar, a tractor on 3 ha, with a winch or simply with a pickaxe. Spring treatments are carried out with sulphur and, depending on the vintage, with Bordeaux mixture (three times in 9 years), as well as with various plant infusions. Green work is essential in order to treat as little as possible. Soil amendment is systematic because the soil is very filtering. In the cellar, the vinification is rather cold, whole harvest, semi-carbonic, carbonic and sometimes de-stemmed. Fermentation is carried out naturally thanks to indigenous yeasts ! The use of sulphur is very light when necessary. At the beginning, Loïc forbade himself the addition of sulfites. Wisdom and experience showed him that used with care and especially only at bottling, the wines kept a good stability ! The grape varieties of maison : in whites, Macabeu, Carignan Gris, Grenache gris, Grenache blanc and Carignan blanc are about sixty years old and are planted on soils of gneiss, grey schist and granitic arenas. The four plots of Black Carignan are located on the same soil types. The vines are 52 to 60 years old. 105 years old! The Grape variety Grenache noir is grown on a one hectare plot planted in 1966 on a schist soil and a second plot in Latour de France. The Syrah vines are 35 years old and are planted on a hillside of straight schist. A new 4 hectare parcel located in Caudiès-de-Fenouillèdes has been vinified for 2 years (Carignan Syrah, Grenache Noir, Macabeu). Loïc Roure also has a trading part sold under the name "En attendant la pluie" (Waiting for the rain). Vintages made from fermented organic grapes, bought or shared.
