We're telling you about their Winery
Maya Sallée tells us about their Winery : " Ever since Nicolas and I met, we had the dream of one day working our own vineyards. Although we both have degrees in agronomy and oenology, we started out working for other people in almost every capacity. I was interested in organic and biodynamic wine from the beginning, and our last jobs, in Alsace, allowed us to work with great natural and biodynamic winemakers, who have become models and friends. In 2015, it was time for us to make this dream come true. We looked for vineyards in Cahors, on the causse, in the sector of the appellation where the wines were the most to our taste. Fabien helped us, we did the 2015 harvest at his place in Trespoux, and we quickly found vines in the village. A winemaker wanted to retire, he gave us his parcels. First 1 hectare, in 2016, then his other 6 hectares the year after. |
We started the creation of a Winery on this basis, by acquiring some tools (manual essentially), by renting a cellar at 15 minutes of the vines, and by starting the conversion of the vines towards the bio, the biodynamy, in short a beautiful agronomy able to make mature beautiful grapes. In our village of Trespoux, we have the chance to work several distinct terroirs. At the winery, our goal will be to express the singularity of these terroirs in parcel-based vintages, and also to make people discover the fine, juicy, elegant side of our Grape variety and of our appellation."
