Concerning the odours of the farm, the henhouse, etc... We call this a discount. Wine smells like a reduction, like a
maison that hasn't been opened for a long time and needs to be oxygenated (open the windows). Live wines, natural wines
can go through this reduction phase. Little protected in sulphites, they naturally protect themselves from oxygen by closing
on them . = reduction. If we open a bottle and we fall on this phase more or less strong, it is not pleasant.
It is necessary to aerate the wine: pass in carafe or open the bottle in advance and pour the equivalent of a glass so that the wine in the bottle has an important oxygenation zone.

Natural wines must be kept at less than 14°c to avoid any resumption of fermentation. The latter, even weak, will disturb the wine, bringing gas and therefore bubbles.
