Winery Didon – The Living Precision of the Côte ChalonnaiseA Couple of Winemakers: A Journey Guided by BiodynamicsWinery Didon was founded in 2017, when Naïma and David Didon purchased a 2-hectare plot in Chassey-le-Camp, in the far north of the Côte Chalonnaise, just above Bouzeron. David began training in biodynamics in 1995 in Beajeu, before leading the organic and biodynamic conversion of the Montille estate ( Winery ) in Volnay alongside Étienne de Montille. Naïma, for her part, has worked in the Burgundy wine industry, in both administrative and marketing roles. The couple does not come from a family with a history of win Winemaker : the “ Winery ” is the result of a shared passion and a long-standing project. The "Les Vignes Blanches" Vineyard: An Exceptional TerroirThe vineyard is concentrated in a single block, the locality known as “Les Vignes Blanches, ” considered the best in Chassey-le-Camp: a steep southeast-facing slope with clay-limestone soils resting on gray marl. The oldest vines, planted between 1947 and 1960, are cultivated using mass selection. The “Grape varieties ” blend combines Pinot Noir, Chardonnay, Aligoté, and Pinot Blanc (in very small quantities). |
Biodynamic Viticulture, a Non-Interventionist WineryThe approach is based on a simple principle: “Work hard in the vineyard, be lazy in the cellar.” Biodynamic preparations, manual labor, respect for living organisms and biodiversity, and no heavy machinery. In the cellar: indigenous yeasts, no use of additives, and aging in neutral containers (barrels, stainless steel, fiberglass). Winery ’s wines are vinified without any added sulfur; the merchant wines, produced in 2021 following frost and downy mildew, contain only trace amounts. The Cuvées of the Winery
