A Winery on a Human Scale
Located in Saint-Cyprien-sur-Dourdou, at the northern edge of the Marcillac appellation, Winery Verdus is run by Aline Solignac and Philippe Rousseau. Since 2014, this winemaking couple has gradually taken over part of the family farm to develop a 3-hectare vineyard, complemented by 1.5 hectares of green asparagus. Their artisanal and environmentally friendly approach has made them a leader in organic farming in the region.
A Schist and Sandstone Terroir
The vineyards of Winery Verdus Winery thrive on south-facing schist and sandstone slopes, offering ideal conditions for growing grape varieties typical of the Aveyron region.Grape varieties Fer Servadou (or Mansois), Grape variety of the Marcillac appellation, as well as Chenin and Roussellou ( a Grape variety that the Winery to bring back into the spotlight). The soils and exposure favor wines with great freshness and beautiful minerality.

Organic Viticulture
The Winery certified organic and practices environmentally friendly viticulture. Philippe Rousseau and Aline Solignac cultivate their plots using traditional methods, prioritizing natural techniques and cover cropping. Their commitment to sustainable agriculture is also reflected in the presence of herds of cows and draft horses on the pastures surrounding the vineyards and asparagus fields (they also grow asparagus, hand-picked and sold directly to consumers. )

Winery offers wines classified as AOC Marcillac and IGP Vins de l’Aveyron, reflecting the diversity and authenticity of their terroir:

“La Mitat” (Red, Fer Servadou) – A fruity and spicy wine with soft tannins, perfect for pairing with regional dishes such as aligot or Roquefort.

“Cap Al Tap” (Red, Fer Servadou) – A full-bodied, rich wine with aromas of red berries and licorice, perfect for grilled meats.

“Passe Carrière” (White, Chenin) – A dry, mineral-driven white wine with notes of citrus and white flowers, perfect as an aperitif or with fish.
