Blast (sweet wine, blend 2011/2016 and 2018) - Château Lestignac
Blend of a 2011, a 2016 and a 2018. The sweet wines of Camille and MathiasChâteau Lestignac) are not "stopped". that is, fermentation stops on its own when the yeasts run up against the volume of sugar.
After that, the barrels are not topped up.
Some of the less syrupy batches become almost dry and become rancid, while others remain syrupy but with a beautiful oxidative dimension.
HERE, this blend is halfway between liqueur and rancio. A wine of candied fruit, dried fruit and sweet spices. Insane complexity. There's little sensation of over-sweetness, just balance and finesse between sugar and oxidation, a perfect interplay of balance and counter-balance.
Immense length and slender structure on the palate, this wine will stand the test of time, it's almost immortal!
