Clément Baraut's Winery , located at Mûrs Erigné, offers superb chenin in the Savennières appellation as well as grolleau from old vines. Clément Baraut has a background as an ecologist and physiologist. Following exchanges with a friend, he joined the world of wine as a consultant oenologist in the Angevin region in the early 2000s. After a few years, Clément became more interested and oriented himself a little more towards the vine, still in consulting, but this time within an associative structure that links the winegrowers and the Chamber of Agriculture. In particular, he works with a team that focuses on organic and biodynamic agriculture. From 2009 /2010, he has the opportunity to acquire some very nice plots of land in Bonnezeaux, then in Savennières and in the terroir of La Roche aux Moines. He began his career at winemaker by working with Patrick Baudouin in 2010. He became winemaker in 2014. Originally from Burgundy, he finds in Savennières this notion of terroir with its different parcels. He is very attached to the historical aspect of these terroirs, worked over 1000 years ago by the monks. " This terroir is sublimated by the chenin." |
The Baraut vineyard is certified organic and the vines are managed biodynamically (not certified). Why biodynamics? " In order to cause as little stress as possible to the vines while they are growing. Clément tries to work in the purest possible style, both aromatically and structurally. With very gentle handling on the fruit and then on the wine. Vinification is done most naturally, using indigenous yeasts and no inputs (the right school!). Its aim is "to capture the maximum of finesse and elegance on the aromatic level in order to offer the most racy and chiselled wines possible ". In order not to mark the wines, the maturing is done in barrels of several wines. Most of its vintages are without added sulphite. Result? It's superb: straight, direct, mineral vintages, on the fruit. We strongly invite you to discover the work of Clément Baraut; three Savennières (including one in the Roche aux Moines appellation) with really different profiles as well as two cuvées of grolleau on very old vines.
