A trained oenologist, Italian by profession and passionate about old grape varieties, Sybil Baldassarre moved to the heights of Faugères in 2015 and created Winery de "La Graine Sauvage " in order to produce - exclusively - precise, fresh, generous white wines; natural wines, in other words!
On 3 hectares of a single plot, the vines are located at an altitude of 450 metres, on the crest of a hill in the commune of Cabrerolles. With a south-east exposure overlooking the Mediterranean, on a very old schist terroir.
As Sybil so aptly puts it, " wine is made in the vineyard "; this is why all the operations carried out give priority to maintaining the vitality of the soil, with the greatest respect for the living organisms and the balances still present. And by using only substances of mineral or vegetable origin to protect it, as well as animal manure to feed it. The vines are grassed spontaneously. The work is mainly manual, both in the vineyard and in the cellar, in a perpetual search for precision. The four grape varieties of Winery, white grenache, vermentino, roussanne and marsanne, are picked separately in crates and vinified with their indigenous flora, without the use of any oenological inputs. Sybil Baldassarre keeps her wines on the lees and then ages them for a minimum of one year in vats; they are neither filtered nor sulphited.

Faced with climate change and periods of drought, Sybil is determined to bring the region's old grape varieties (picpoul, aramon blanc, servan, clairette), which are more resistant to the arid climate, back into fashion, and is replanting them from 2019 onwards in a small part of Winery. It also plans to start a conservatory of old grape varieties of the region.
