Baptiste and his brother Philippe Valette as well as Cecile, Philippe's wife, represent the 3rd generation of winegrowers on vines that have been organically cultivated for almost 20 years. The 15 hectares, on Chaintré, as well as a few plots on Vinzelles, are run by true enthusiasts who "accompany" their wine for a better expression of an exceptional terroir. The clay-limestone or siliceous soils are aerated by ploughing or grassed depending on the plots. Drained in this way, they regain the microbial life necessary for the good health and "freedom" of the vines, according to Philippe. | Yields are reduced and the grapes, tasted on the vine to determine their maturity, are delicately picked by hand in small crates and placed directly into the pneumatic press. The juice flows by gravity into stainless steel tanks without any sulphur. The next stage is one of the most original experiments in the region: maturing in barrels on fine lees can last up to 72 months (on the Mr Noly cuvée). Marketed only when they consider them ready, the 7 vintages, mostly old chardonnay, are an enchantment of complexity, balance and accuracy, each with its own character. |
