All you need to know about Pinot Noir de Bourgogne

Why is Pinot Noir so special in Burgundy? 

Pinot Noir is one of the few grape varieties that can withstand Burgundy's capricious climate! It has to be said that Grape variety is also difficult, as it needs temperatures that are neither too hot nor too cold, with sunshine but not too much... The region offers optimal conditions! Nevertheless, it's a grape that needs to be pampered, as its thin skin is sensitive and disease can strike very quickly. 

It produces some of Burgundy's finest crus: its reputation is well-founded! It also gives famous appellations, and wines made from this grape variety can vary astonishingly from one village to another, thanks to its ability to convey the terroir. Limestone or clay soils: the nuances will be felt!


What dish to serve with a Burgundy Pinot Noir? 

With meat, Pinot Noir is the perfect accompaniment to roast guinea fowl, preferably cooked pigeon in rosé, or saddle of lamb.

Pinot Noir in the fridge?

Don't put them in the fridge, as this will erase their subtle flavors. On the other hand, these wines will reveal themselves at a slightly lower temperature than average. You can therefore place them in the coldest room of your maison for around 30 minutes before serving. Ideally, it should be served at around 14 to 15 degrees.
