This mentorship has enabled Fanny to acquire in-depth expertise in the production of wines without chemical inputs, where the expression of terroir is at the heart of all concerns. Her biodynamic work reflects the meticulous attention paid to every stage of the viticultural process: from ploughing the soil to natural grassing, every gesture is designed to enhance the biodiversity of her plots. As for the harvest, it is carried out by hand, guaranteeing carefully selected, ripe and healthy grapes, to optimize the quality of the wines. Artisanal methods for exceptional winesIn her cellar, Fanny Sabre uses unique, traditional winemaking techniques to produce exceptional wines. For her red wines, she uses the semi-carbonic maceration method, a technique that preserves the fruity aromas and freshness of the grapes. Fermentations, meanwhile, are carried out directly in barrels, a method that preserves the integrity of the wines and enhances their aromatic complexity. To preserve the freshness and finesse that characterize her cuvées, Fanny adopts a meticulous "bâtonnage" (stirring of the lees), without racking, which allows the lees to nourish the wines throughout the ageing process. This highly precise process culminates in hand bottling, a final gesture that reflects the constant attention paid to every detail. Fanny Sabre truly represents the future of Burgundy wine, combining tradition and innovation to create wines that make a lasting impression with their elegance and authenticity.

Family heritage and the rise of Fanny SabreIn 2005, at just 20 years of age, Fanny Sabre decided to take over the family Winery , a bold decision that revealed her strong character and passion for the vine. The Winery winery, created in the 1980s by her family, gave her the opportunity to develop her own style. Over the years, she has expanded and diversified her plots, now cultivating 7.5 hectares of vines on the prestigious Côte de Beaune, including some exceptional terroirs in Meursault. Fanny's commitment to sustainable, nature-friendly agriculture was crowned in 2018 by the award of Bio Ecocert certification, a recognition of her work in favor of organic viticulture.
