The Winery Aillaud Winery

The Winery viticole Laura Aillaud is located in the Luberon, at La Tour d'Aigues (84), at the crossroads of the Rhône Valley and Provence.

A Winemaker passionate about natural wine

Laura's career path began in the sommelier/restaurant business, where she discovered a strong taste for natural wines and then decided to pursue this interest. She then took a BTS in Viticulture-Oenology and made her first wine at Jean-Christophe Comor (The Promised Lands, in the Var region), which made him want to make it his career.

She continued her apprenticeship for three years before settling in La Tour d’Aigues in 2017, in the Luberon, where she is originally from. Laura started with three hectares on a lease before purchasing three hectares of vineyards, which she decided to replant. Winery Grape varieties , reflecting the region, Winery very diverse (Grenache about 50 years old, Syrah, Carignan, Counoise, Muscat d’Hambourg, Vermentino, Ugni Blanc, and Roussanne).

His choice to produce organic wines

Organic farming is an obvious choice for Laura, especially in the Luberon where the sun and wind facilitate this method of cultivation. However, she considers that this is only one step in making terroir wines that respect nature.

The land is not ploughed much, but when necessary, Laura uses animal traction, as she does for the decavaillonnage, so as not to disturb the soil.
The vines are naturally grassed to keep them fresh. Always experimenting and searching for a natural wine from Provence that reflects her image and is home-made, Laura seeks to make wines that are as natural as possible. In the cellar, the fermentations are spontaneous thanks to the indigenous yeasts and the wines are very little or not sulphited at all.
