We're talking to you about his Winery
| Kohki Iwata is a young Japanese man who arrived in France in 2008. Before that, Kohki worked at a natural wine bar in Osaka, Japan, for about five years. Upon his arrival in France, he completed several internships with renowned winemakers, such as Olivier Cousin (2 months) and Jean Foillard (6 months), for example. He then worked for four years at the Augé cellars in Paris, starting in 2010. Finally, in 2015, he began working at Winery (Saint Chinian). Winery is unique Winery has been organically farmed since 1960 and covers a large area: 27 hectares. Winery also known for its ongoing commitment to environmental sustainability. As such, the Winery boast of being 100% self-sufficient in (green) electricity. |
So Kohki Iwata settled in the area (in Assignan) with his wife and decided in 2016 to start vinifying grapes on his own. No need to go far to buy the grapes: those from the Soulié's Winery (AB and Ecocert certified). A Japanese company provides him with some financing to get started and SAS Wa Sud is born in 2017. The vinified wines are without inputs, pure juices. The production is low (about 5,000 bottles) and the quality is really there. Decidedly these Japanese winemakers are amazing and continue to show their interest in natural wines from France. To be continued. |
