Sweet pleasures: our organic, biodynamic and natural dessert wines
A sweet, rich wine with concentrated flavours, dessert wine is made from grapes that have a high sugar content at harvest. Another technique, mutage: fermentation is stopped, when the must has reached the desired residual sugar content, by adding a neutral brandy (e.g. Port and Vin Doux Naturels). Banuyls, Muscat, Jurançon, Maury, Gewürtztraminer, sweet Gaillac, Pineau des Charentes, Sauternes, Monbazillac, cider... the choice is vast!
