We're talking to you about his Winery

Edouard Laffitte cultivates his 7 hectares at Winery Bout du Monde using organic methods across three communes in Roussillon: 3 ha in Lansac on granitic soil, 2 ha in Rasiguères on schist, and 2 ha in Cassagnes on gneiss. The grapes are harvested by hand, and winemaking is natural, using carbonic maceration at low temperatures. The wines are unfiltered. He produces wines by terroir: one white cuvée (Brave Margot) and five red cuvées. After several years working at the Estézargues cooperative winery, Edouard Laffitte felt the urge to work the land. Many of his friends had already taken the plunge… Coming from a non-farming background, Edouard started from scratch. But fortunately, Loïc Roure (Winery du Possible ) who has just settled in Lansac at "JAJAKISTAN", in the Pyrénées-Orientales, offers to welcome him in the cellar he has just acquired, a former cooperative cellar. All that remains is to find the vines; his choice is for vines at high altitude, with a north-facing exposure to favour freshness, fruit and limit alcohol. The little story goes that the first visitors found it was " Le Bout du Monde ", hence the name Winery ! Wines to be discovered very quickly!
