La Chaume des Lies

A young Winery , born in 2021

Winery La Chaume des Lies was founded in 2021 by Margaux Rivaux, who was joined a year later by her partner, Lothar Galloo. The couple met in Saint-Aubin, at Pierre Fenals’s estate, “Maison ” in Belles Lies: Margaux began working there in 2016, and Lothar in 2018. For several years, they trained under him in biodynamic viticulture and additive-free winemaking.

Winery . has set up shop in Baubigny, a small village in the Hautes-Côtes de Beaune, where an old winery has been completely renovated. The first vintage produced there is the 2021.

Vineyard and Terroir

The vineyard covers approximately 2 hectares spread across Baubigny, Saint-Aubin, Auxey-Duresses, and Bouzeron. Some of the plots are located at higher elevations, around 350 to 400 meters, often above the fog that blankets the valley, on soils that are predominantly limestone and clay-limestone. The “ Winery ” includes several old vines, including Pinot Noir vines planted in 1942 and a plotin Auxey-Duresses that is approximately 80 years old.

Grape varieties s combines Burgundian grape varieties: Aligoté and Chardonnay for the whites, and Pinot Noir and Gamay for the reds.

Cultivation and Winemaking Methods

True to the teachings of Pierre Fenals, the “ Winery ” practices organic viticulture inspired by biodynamic principles, without synthetic chemicals and with controlled yields. In the cellar, the wines are made without added sulfur, using indigenous yeasts. The reds are often vinified using whole clusters, and aging takes place without new oak. Starting with the 2023 vintage, several white wines will be aged for 24 months in barrels.

Iconic vintages

  • Bouzeron – Aligoté from the upper plateau, grown on red clay soils
  • Bourgogne Hautes-Côtes de Beaune Red – a blend from four plots, vines planted in 1942
  • "Les Châtaigniers" Red Burgundy – Pinot Noir from Saint-Aubin
