Les Vignes Blanches - Cuvée Longue 2023 - Red Burgundy - Winery Didon
The nose opens with notes of black cherry, crushed strawberry, and a hint of spice and forest floor. The fruit is ripe, and the palate is both silky and lively, with a touch of salinity (characteristic of the " Winery "?). The fine tannins linger on a fresh, persistent finish.
A natural red wine with aging potential, meant to be cellared for 5 to 10 years, but already superb after being decanted for an hour: roasted quail, duck with cherries, beef bourguignon, or aged Comté cheese. To be served at 14–15 °C.
"The “Cuvée Longue”: Pinot Noir from the Vignes Blanches vineyard—the southeast-facing slope of Chassey-le-Camp, with clay-limestone soil, plowed by horse—which is aged here for nearly two years: 10 months in concrete eggs, followed by 10 months in fiberglass tanks, before bottling"
