We're talking to you about his Winery
Fanny Sabre, Winemaker , a gifted winemaker based in Pommard, is one of those friends -Winemakers - that we particularly appreciate. From Aligoté to prestigious cuvées on Premiers Crus, via 'generic' cuvées, Fanny Sabre traces her Burgundian path by chiselling wines of great purity for refined epicureans. Full of the desire to do well, stubbornness and a sense of humor, in 2005 the very young Fanny took over the family's Winery , created in the 1980s. Little by little, she added mythical vines in the Meursault appellation, and today works 7.5 hectares in the Côte de Beaune. Working with Philippe Pacalet for 3 years, she was introduced to "natural" wines with total respect for the environment, all centered on the notion of terroir. |
Today, ploughing, grassing and organic treatments give life to the vines, and the healthy and ripe grapes are harvested by hand. In her cellar, Fanny practices semi-carbonic maceration and fermentation directly in barrels for the reds, in which the lees are blown out in order to put them back in suspension. A single stirring of the lees and no racking will bring freshness, straightness and finesse to her numerous vintages. The bottling is done by hand to finalize a work of goldsmith. We love it!!!
