We're telling you about their Winery

Here we are in Burgundy, between Chablis and Auxerre. The (magnificent) wines signed by Alice and Olivier De Moor, Ecocert certified for 10 years, are for many exported, and it is difficult to buy them on the spot. The production is quickly sold out, sold or reserved by more and more wine lovers! The price of a well-deserved success... Alice, coming from the Jura, and Olivier the Burgundian met in 1992. Both graduated from the DNO in Dijon, they lived and worked for other estates until the end of 1994. Their strong personality pushed them to take the plunge with the vines that Olivier De Moor had planted in 1989 and 1 ha rented on St-Bris and plantations on Chitry. After many failures, the couple succeeded, without outside support and in latitudes considered difficult, in refining their wines, which had become straightforward and precise, while respecting their terroir. The conversion to organic farming began in 2005. They obtained Ecocert certification in 2008. They then decided to restructure the winery to work by gravity and bought a pneumatic press. The 7 ha of Winery are worked without sowing and the vines pruned to reduce yields (35 hl/ha on average instead of the 60 hl of some Chablis winegrowers!). Grapes are hand-picked in crates to avoid early oxidation by crushing the berries. The use of sulfur is discontinued during the harvest and winemaking processes. However, the De Moors allow up to 30 mg/L of total SO₂ at bottling. Beneath maison , barrels that have held several vintages house the musts, which ferment for a long time without the addition of exogenous yeasts and without being filtered. Winery cuvées Winery to 45,000 bottles produced annually and require up to 15 people during peak season for the harvest and bottling. Rooted in limestone soils formed from an ancient sea, the Chablis Chardonnays thrive across 3 hectares in the commune of Courgis. Their Chablis wines, sourced from different plots, are located on the plateau (richer) or on the hillsides (more mineral-driven for the “Rosette,” considered their premier cru). The Bourgogne Aligoté wines from Chitry come in three cuvées across 2 hectares (one of which features vines dating back to 1902!). Finally, the two remaining cuvées—Bourgogne from Chitry and Sauvignon from Saint-Bris le Vineux—cover 1.5 hectares. In 2009: they were finally able to launch a small wine trading operation and source grapes that were carefully cultivated and certified organic within the Chablis and Chablis Premier Cru appellations. The Winery in 2017 by 2 hectares of Chablis Premier Cru vineyards in Mont de Milieu and Vau de Vey.
