After spending his entire childhood in a small Burgundian village on the Chablis (Courgis) side surrounded by a father and grandfather who were winegrowers, Thomas Pico inherited a passion for the profession. He decided to study viticulture and oenology in Beaune. His curiosity and his desire to respect the environment and the health of his family and friends were determining factors in his thinking. He works from the family Winery , the Bois d'Yver, then takes over his own vineyards which he immediately converts to organic farming and founds his own Winery de Pattes Loup.

On the friendly advice of Alice and Olivier De Moor, her neighbours, Thomas He replants using mass selection, refusing to use the clones most commonly found in the Chablis vineyards. He favors grass cover on his plots. He pays particular attention to trellising and leaf removal, staying true to his commitment to controlling yields and, above all, to producing well-ripened, concentrated grapes.

For this is undoubtedly one of the “hallmarks” of Thomas Pico’s wines: this lover of the great white wines of the Côte d’Or seeks to craft deep, textured wines. Far from the current trend of “freshness at all costs”—which risks harvesting underripe fruit and ultimately producing flimsy wines sorely lacking in structure—Thomas, for his part, seeks high ripeness. He is generally one of the last to harvest, relying more on the appearance and, above all, the flavor of the grapes than on purely technical analyses.
