We're talking to you about his Winery
Jean-Christophe Comor's work goes far; manual harvesting, vinification with indigenous yeasts, without acidification and a very slight stabilisation in SO2. The Winery, located north of Toulon, has 10 wines (red, white and rosé), each with different vinification and maturing processes to bring out the best of the terroir. Many and varied grape varieties: carignan, mourvèdre, syrah, grenache, cinsault, carignan blanc, rolle, clairette and roussanne. winemaker : a second life for a few years now under his belt, our Jean-Christophe! He gave himself body and soul to politics. From Parisian ministerial cabinets to backroom meetings, he fought tirelessly... and threw in the towel in 2004. His new life began in La Roquebrussanne, in the foothills of the Massif de la Sainte Baume (Var). |
The Winery The Promised Lands is born but another colossal task awaits it. In the beginning, he spends his days on the spot clearing, uprooting, cutting down olive trees, wild oaks, broom and other shrubs. Vines used to grow here in Roman times. Reconversion for the man but also for the vines worked according to the "organic" approach, under the astonished eyes of his neighbours who laugh at this madman. We, crazy people like that, in Provence or elsewhere, are asking for more! |
