We're telling you about their Winery
| Luc and Patricia Bettoni, from Winery Les Eminades, set up in Saint-Chinian (N-W of Béziers), captivated by the mosaic of soils in the region: flint, schistose limestone, red sandstone, clay-limestone, rolled pebbles... In total, more than 18 plots of vines, at different altitudes (from 170 to 270 m), with mostly very old Carignans, some of which are a hundred years old, to their great delight. The Winery works with the greatest respect for nature: use of a caterpillar to plough the soil and thus preserve the integrity of the soil, manual harvesting in crates with rigorous sorting of the grapes. | In the cellar, the equipment is rather basic. The Winery vinifies the wines in small concrete and fibre vats and obviously trusts the indigenous yeasts to carry out the fermentations. The use of sulphur is parsimonious and is always a little more refined so as not to exceed 50mg of total S02. After having looked for low yields during the first years and thus for the matter, the choice today is more towards a slightly earlier harvest to gain in freshness and obtain wines less generous in alcohol. |
