| Sauro Maule essentially uses natural solutions to eliminate any basic treatment in order to deliver natural wines that are pleasant, very fresh and simply good. The history of the farm "Il Cavallino" began many years ago on the hills of Colli Berici (Veneto) as a cattle breeding company. Sauro's father, Lino Maule, a man with great experience and an incredible love for horses, wisely followed this activity and gradually passed on the taste for land work to his son. Then, a few years ago, Mauro bought 4 ha of old vines in the Selva of Montebello Vicentino (also in the Veneto region), and changed the chemical philosophy of the vineyard by undertaking a revolution in cultivation systems and techniques. | He began by pulling up the vines that had the disadvantage of having been chemically treated. The vine is then replanted with the current Guyot system, which oxygenates the soil and contributes to the microbiological activity and further development of the plant's root system. Same philosophy in the winery, no synthetic substances are used. |
