We're talking to you about his Winery
Trained as an oenologist, Italian by trade and passionate about old grape varieties, Sybil Baldassarre moved to the heights of Faugères in 2015 and created the Winery of "La Graine Sauvage " in order to produce exclusively precise, fresh and generous white wines. Natural wines! As Sybil says so well, "wine is made in the vineyard". This is why all the operations carried out give priority to maintaining the vitality of the soil, with the greatest respect for living organisms and the balance still present. Sybil uses only mineral or vegetable substances to protect its vines and animal manure to feed them. They are grassed spontaneously. The work is mainly manual, in the vineyard as well as in the cellar, in a perpetual search for precision. The four grape varieties of Winery, Grenache blanc, Vermentino, Roussanne and Marsanne, are picked separately, in crates, and vinified with their indigenous flora, without any oenological inputs. Sybil keeps its wines on the lees and then ages them for a minimum of one year in vats. They are neither filtered nor sulphured. |
Faced with global warming and periods of drought, Sybil's aim is to bring back the old grape varieties of the region (Picpoul, Aramon blanc, Servan, Clairette), which are more resistant to the arid climate. She is replanting a small part of Winery in 2019 and also plans to launch a conservatory of the region's old grape varieties. As you will have understood, Sybil Baldassarre is one of those Winemakers who emphasize nature thanks to "pure juice" vintages, so let yourself be tempted! |
